With Jasmine Rice and Oven Roasted Broccoli
This is the easiest orange chicken recipe ever and it's made with (wait for it!) orange marmalade and BBQ sauce (what??).
Orange Chicken with Jasmine Rice and Oven Roasted Broccoli
Ingredients
2 large chicken breasts cut up
2 eggs
1-2 cups flour
1 cup BBQ sauce
1 cup Orange Marmalade
1/4 cup soy sauce
1 cup jasmine rice
2 green onions
1 tbsp butter
2 large broccoli
Crushed red pepper flakes (optional)
Step-by-Step Instructions
Cut up the broccoli, season with salt and pepper, toss in 2 tbsp olive oil, spread on a foil lined cookie sheet and roast at 450F for 15 min.
Thinly slice the green onions separating the whites from the green pieces. Melt butter in a medium sauce pan, sauté the white onion bottoms for 30 sec, add the rice, 1 1/4 cup of water and a large pinch of salt. Bring to boil, reduce the heat, cover and cook until the water is absorbed. Fluff with fork and set aside.
Scramble the two eggs, dip each piece of chicken in them, toss in the flour to fully coat and set aside.
In a saucepan combine the bbq sauce, marmalade, soy sauce and red pepper flakes if desired and bring to boil. Set aside.
Heat 2 tbsp olive oil in a large pan and fry the chicken bites turning occasionally until browned on all sides (the chicken might be cooked in batches depending on pan size). Once the chicken is cooked through, bring all chicken back to the pan (if cooked in batches), pour in the bbq/marmalade sauce and mix until well combined.
Plate your dish with the rice, broccoli and chicken. Sprinkle with the green parts of the onion.
